• 500 grams of bitter gourd
• 250 grams of unshelled greenshell mussels
• 100 grams of green chilies
• 100 grams of red chilies
• 150 grams tomatoes
• 6 red onions diced
• 3 cloves of garlic diced
• 3 slices of ginger
• 3 slices of turmeric
• 3 slices of galangal
• 2 pieces of Eugenia polyantha / salam leaf
• 1 lemon grass
• Salt and sugar to taste
• Cooking oil
2. Preparations
Wash the bitter gourd cleanly and thoroughly.
Remove the seeds then cut or sliced it.
Sliced the red and green chillies.
Sliced the tomatoes in thick slices.
Stir fry the red and green chillies, onions, garlic, ginger, turmeric, galangal, Salam leaf lemon grass until it is properly caramelised.
Add in the bitter gourd, tomatoes, mussels, salt and sugar to taste.
Mix it well until fully cooked.
Ready to be served.
